I had read about CoVino and made reservations before our trip.

CoVino is located on Calle Pestrin Castello. They serve a 3-course dinner for €36. You have several options for each course.
It's a small restaurant with an open kitchen.
Amuse Bouche of crudités with a squirt of olive oil vinaigrette.
White Mantis Shrimp with Fresh Spinach, Grapes, Pomegranate and Bergamot Essence.
Paccheri with Ragu of Mamma Liviana--pasta au gratin with beef and pork Bolognese, extra virgin olive oil, besciamelle and Parmiggiano.
For the entree, there was a special for the night--Cod with Tomato, Olives and Shishito with Mashed Potato.
Swordfish "Tonne" with Soft Tuna Sauce, Fresh Cherry Tomatoes and Fruits of Capers.
Creme Brule with Pistachios from Bronte and Pepper from Valle di Maggia
Amalfi Lemon Curd and Soft Meringue "Broken" Cake
Dinner was delicious and well worth the €36. We also had some great wine pairings.
