Spaghetti with Tomatoes & Shrimp
1 lb thin spaghetti6 Tbs olive oil, divided
1 lb shrimp, shelled & deveined
6 cloves garlic
1 lb tomatoes, chopped
10 basil leaves, chiffonade
1/4 tsp red pepper flakes
salt & pepper
Bring pot of water to boil and add thin spaghetti. Cook to al dente according to package instructions.
Heat 3 Tbs olive oil over high heat. Add shrimp in 1 layer. Toss to cook. Remove from pan.
Add remaining 3 Tbs olive oil to pan. Add garlic and sauté for 15 seconds. Add tomatoes and cook until heated. Add cooked shrimp, basil leaves, red pepper flakes and salt & pepper to taste.
Drain pasta and add to tomatoes. Add shrimp and drizzle with additional olive oil.
