Brasato Al Barolo--Center Cut Short Rib Braised with Aromatic Herbs & Porcini Mushrooms Topped with Barolo Wine Sauce, Garnished with Truffle Essence Potato Puree paired with 2011 Artezin Wines Zinfandel "Old Vines," Mendocino. The Barolo wine sauce is so rich, I don't leave a single drop on the plate.
