Salmone Affumicato--Crispy Asian Style Wafer, Thin Slices of Smoked Salmon, Persian Cucumbers & Crème Fraîche, paired with Cava Juve y Camps Brut Rose, Sant Sadurni d'Anoia, Spain. The salmon was delicious--thin, smoky and flavorful. This was a dark bubbly pinot noir.
Quaglia Arrosto--Stone Oven Roasted Quail Served in Cannellini Bean Ragoût with Petite Pasta, Organic Escarole, Candied Garlic & Brodetto D'Erbe, paired with 2012 Paul Hobbs Winery CrossBarn Pinot Noir, Sonoma Coast. I love the quail--so tender and flavorful. Although I'm not a fan of Paul Hobbs, I loved this Crossbarn pinot. It had a nice nose and tasted delicious!
