Bun Bo Hue

I went to Taylor's Sausages to pick up more boudin this weekend and met a friend in Oakland for bun bo Hue. It's a spicy Vietnamese noodle with round cylindrical chewy noodles, thinly sliced beef, sliced Vietnamese pork roll, pig knuckles and congealed pig blood (I don't eat the blood). Add shredded cabbage, bean sprouts, thinly sliced banana blossoms, mint and a green Vietnamese herb. I leave out the thinly sliced onions, chopped green onions, lime and extra hot sauce and shrimp paste.

My friend introduced me to the dish several years ago and we used to go to Ca Mau in San Jose. Sadly, the restaurant closed but she found Bum Mam Soc Trang. The bun bo Hue at Bum Mam doesn't have pig's knuckles but the broth is so flavorful and spiced just right and the noodles are delicious. It's not in a good neighborhood but it's worth risking life and limb to eat.
