Modena
Back to our Italian adventure...From Tuscany, we stopped in Modena to visit Acetaia del Cristo, the largest producer of traditional balsamic vinegar in Modena. Trebbiano grape pressings are boiled and aged in oaken kegs. Over the years, the vinegar is placed in smaller and smaller kegs made of different woods until it is deemed ready for sale. 100 ml of the vinegar sells for $60 at the source, but just one drop is potent. It is syrupy and a perfect accompaniment to Parmigiano-Reggiano cheese (the real thing).
