Raspberry Crumble

I love Ina Garten and her recipes are all good, including this one for Raspberry Crumble.



Raspberry Crumble

1/2 lb unsalted butter, at room temperature
3/4 cup sugar
1 tsp vanilla extract
2 1/3 cups all-purpose flour
1/2 tsp kosher salt
10 oz raspberry jam
2/3 cup granola
1/4 sliced almonds


Preheat oven to 350 degrees.

Mix the butter and sugar on medium speed until combined. Add vanilla extract and mix on low.

Sift the flour and salt together and add slowly to the butter mixture with the mixer on low.

Lightly pat 2/3 of the dough on the bottom of a 9-inch square pan and 1/4 inch up the sides.

Spread the jam, leaving a 1/4 inch border.

Mix the granola with the remaining dough, break into small pieces and distribute evenly over the jam. Sprinkle the almonds on top (I didn't have any almonds).

Bake for 45 minutes until lightly browned.
