This is a very healthy soup and so easy to make.
Tofu Bean Thread Soup
1 small head Napa cabbage, cut into 1 inch pieces
4 dried black mushrooms, soaked in water and cut into slivers
1 block firm tofu, cut into 3/4 inch cubes
1 package (10 oz) frozen fish tofu
5 slices fresh ginger
4 cans (14 1/2 oz) low-sodium chicken broth
2 bundles of bean thread, soaked in water and cut into 3 inch pieces
1 Tbs sesame oil
Cilantro leaves
Add all ingredients except bean thread, sesame seed oil and cilantro to large pot and boil until fish tofu floats. Add bean threads and cook for another 5 minutes. Garnish with cilantro.
