Sugo di Carne

I tried to re-create the sugo di carne I had at Osteria. Not quite as good but it's not bad.


Sugo di Carne

2 Tbs olive oil
1 onion, chopped
1 lb lean ground beef
½ lb lean ground pork
4 cans (14 ½-oz) chopped tomatoes
1 8-oz can tomato sauce
1 6-oz can tomato paste
¼ cup flat-leaf parsley
10 basil leaves
garlic salt
pepper

Heat olive oil and sauté onion until translucent. Add ground beef and ground pork and brown. Do not drain oil.


Puree tomatoes with parsley & basil leaves. Add to pot, along with tomato sauce and tomato paste. Add salt & pepper to taste. Bring to boil then turn heat down to simmer. Simmer for 2 hours until meat is soft.
