Kale Soup

A Portuguese friend taught me how to make kale soup many years ago and it is so comforting.



Kale Soup

3 Tbs olive oil
1 lb linguica or smoked sausage
1 pkg shredded kale
4 cloves garlic
3 cans low-sodium beef broth
3 cans water
4 bay leaves
2 tsp rosemary
1 Tbs marjoram
2 smoked ham hock
2 potatoes, peeled and cut into quarters
1 thick slice prosciutto, cut into cubes
1/2 cup barley
1 cup macaroni, boiled for 5 minutes

Brown linguica or sausage in olive oil. Remove from pot. Saute kale in oil and add garlic, beef broth, water, herbs, ham hock and potatoes. Boil then reduce heat to low. Cook for 30 minutes. Remove potatoes and mash. Add potatoes back to soup, along with barley. Cook 20 minutes longer then add partially cooked macaroni.
