Red Lentil Soup

Red Lentil Soup is very flavorful.



Red Lentil Soup

2 Tbs olive oil
1 large onion, finely diced
2 stalks celery, chopped
1 large red bell pepper, seeded and chopped
2 cloves garlic, minced
1 Tbs smoked paprika
1 1/2 Tbs cumin
1/2 tsp cayenne pepper
2 Tbs tomato paste
3 cans low-sodium chicken stock
1 cup red lentils, rinsed
1/4 cup fine bulgur (soaked in water)
1 Tbs Italian parsley
3 Tbs fresh lemon juice

In a heavy stockpot, heat oil, add onion and saute until soft. Add garlic, celery and red bell pepper. Saute for 2-3 minutes. Add spices and saute for 1 minute. Add tomato paste and saute for another minute. Add lentils and chicken stock. Bring to boil, reduce heat and cover. Simmer for 30 minutes, stirring occasionally until the lentils have blended with the stock.

Add bulgur and cook for 10 minutes, stirring occasionally. Add parsley, lemon juice and season with salt & pepper.
