Tahoe Brunch

This is a great breakfast dish to serve a crowd. I got the recipe from my mother-in-law.



Tahoe Brunch


8 slices white bread, sliced, crust removed
3 Tbs. olive oil
1 yellow onion, chopped
1 ½ lbs mild Italian sausage
½ lb. mushrooms, quartered and roasted
1 pkg frozen spinach, thawed and squeezed dry
½ lb grated cheddar cheese
5 eggs
2 ½ cups milk
1 tsp Slap Ya Mama Cajun Seasoning

Butter 13 x 9 inch glass casserole.  Place bread in single layer.  

In skillet, heat oil and brown onions.  Season to taste. 

Brown sausage and add to onion mixture.  Layer on top of bread.  

Add roasted mushrooms, spinach and cheese.

In bowl, mix eggs and milk.  Add the seasoning. Pour over casserole and refrigerate at least an hour. 

Bake at 350 degrees for 50-60 minutes, covered. Remove cover for last 10 minutes.
