Maison Adam

In St. Jean de Luz, Maison Adam is famous for its macarons.



Gateaux  Basque. The symbol on top is the lauburu or Basque cross and symbolizes the movement of the sun. It's now used as the symbol of good luck and fortune and is ubiquitous in the Basque country. The symbol is also used by the Navajo tribe and by the Hindu.


They specialize in macarons. They have been making these since 1660. They were served at Louis XIV and Maria Teresa's wedding and rumor has it that Louis XIV ate it every day.
