Valette

Valette is one of my favorite restaurants in Sonoma County. We ordered the Chef Valette's "Trust Me" Tasting Menu--$15 per course, 5 courses minimum.


Warm soft delicious rolls


Purchase a bottle of wine and waive the $20 corkage fee for 1 bottle. We tried the Chenin Blanc for $40 and it was delicious. The markup wasn't too bad since it retails for $22.


Hawaiian Ahi Poke Style--Wakame Salad, Soy Kombu Emulsion, Crispy Nori, Warm Avocado. I love the deep fried avocado.


Beef Tartare. It had a tiny quail egg on top. I preferred the ahi tuna.


Creste di Gallo Semolina Pasta, Egg Yolk Custard, House Made Bacon, Crispy Capers. The carbonara-like sauce was tasty.


Pasta with Piquillo Pepper Gastrique. This had a slight bitter taste and was not to my liking.


Scallops en Croute.


The lid was removed to reveal Day Boat Scallops, Shaved Fennel, American Caviar, Champagne Beurre Blanc. The beurre blanc was delicious.


Pancetta Encrusted Halibut, Fresh English Pea, Piquillo Pepper Gastrique, House Cured Pork Coppa. This was good. The piquillo pepper gastrique worked better here.


Liberty Farms Duck Breast and Duck Confit Pave. The duck was prepared perfectly pink.


Waygu Beef. Tender but I liked the duck better.


The S'more--Chocolate Bouchon, Graham Cracker, Toasted Meringue, Caramelia Ice Cream. The toasted marshmallow meringue was good. This was probably my favorite of the 4 desserts we sampled.


ItsNotA "Snickers Bar"--Cocoa Nib Tuile, Peanut Powder, Volo Dark Chocolate. I didn't like this much. It didn't taste like a Snickers Bar.


Bread, Butter & Jam: Fresh Homemade Jam, Toasted Brioche, Salted Brown Butter Ice Cream. I'm not a bread pudding fan so this was not my favorite.


Roasted Strawberry & Cream--Strawberry Tartare, Lemon Frangipane, Whipped Vanilla Ice Cream.
