Thai Curry Abalone

My husband goes abalone diving and freezes them. I found one in the freezer and made Thai Curry Abalone. If you like it spicy, this is for you.
 
 
This is the Green Curry Paste that I use.
 
 
The finished product. Lots of sauce to ladle over steamed rice.
 
 
Thai Curry Abalone
 
1 Tbs Canola oil
2 shallots, chopped
1 abalone, sliced, pounded and cut into strips
3 Tbs green curry paste
2 Tbs pureed lemongrass (can be found in a squeezetube in the vegetable section of the grocery store)
14-oz can light coconut milk
2 Tbs fish sauce
Thai basil (cannot substitute Italian basil)
 
Saute shallots in Canola oil. Add abalone and stir fry until cooked through. Add green curry paste and lemongrass and sauté. Add coconut milk and fish sauce and cover. Cook until heated through. Chiffonade basil and add. Serve over steamed rice.
